Demo papers -- i.e., demonstration papers -- are those that describe a running system. So, they do not make novel scientific contributions, but rather apply scientific insights or technology for some specific purpose. In almost all cases, these papers are submitted to a specific demo track that, when accepted, results in the presentation of the demo (running system) in a special demo session.
